The Wine List at The Three Chimneys was always Eddie Spear’s first love and responsibility – one of the most delightful aspects of his working life, as he refers to it! Once Winner of the AA Wine List Award and always mentioned in restaurant reviews, the list provides a notable choice of wines selected to compliment the food served in the Restaurant. Eddie has always enjoyed the wines of small producers from all around the world, but there is a hint of his preference for red and white Burgundies, perfect with fresh Skye seafood, as well as the island’s lamb and wild game.

Recently, Eddie and Shirley appointed Luke Richardson to take on the duty of Sommelier. Luke has a rich knowledge of wine and great experience in the restaurant business. Working with Eddie and Daniel, he is intent upon making The Three Chimneys Wine List the best in Scotland. Luke has a particularly good grasp of selecting wines to match food – a skill that will be put to excellent use when assisting customers select wines by the glass to drink with each of the Seven Courses of Skye dinner menu. Luke grew up in Moidart and returning to the west coast of Scotland to work has been his ambition for some time. Earlier in his career he was Assistant Sommelier to Matthieu Longuere at La Trompette in Chiswick, London, from whom he gleaned a great deal, running a critically acclaimed wine list of well over 650 bins.

There are a number of "House" wines at competitive prices, including Champagne. Several wines are available by the glass and there are some very good half bottles. The list includes helpful tasting notes alongside each wine which assist guests with selecting wines to match their choice from the menu. Luke, Daniel, Jeanette and other Senior members of the Restaurant team are very knowledgeable about the Wine List and matching wines with food. They all enjoy this aspect of their work as much as the others and between them, they have a wealth of experience to draw upon, gained through varied work in the industry and their training through the Wine and Spirit Education Trust.
