The Three Chimneys and The House Over-By comes under the overall management of Angela Finlay, General Manager. Angela joined the staff in 2010, working at first on the Restaurant floor and later, closely with Eddie Spear on all financial aspects of the Company. Angela has built an outstanding, successful career in the Scottish Hospitality Industry, but wanted to move into the small business enterprise sector and combine a challenging job in a thriving company together with a better lifestyle. She moved to the Isle of Skye with her husband Elgar and young daughter, Daisy, where the family now have a lovely home in the local community.

With a business degree from Paisley University, Angela’s first career choice was in Hospitality, launching and managing a number of restaurants, bars and clubs in London and Glasgow, before taking senior management roles with Marriott Hotels, namely the Dalmahoy Hotel and Country Club, followed by Glasgow Marriott. With over ten years of high-end Hospitality experience, Angela has brought a wealth of professional knowledge, financial and HR skills to The Three Chimneys, as well as her passion for running and managing a growing business.

The Restaurant Team is led by Richard Dunn and Graeme Creamer. Both young men are building their careers in the Scottish Hospitality Industry with huge enthusiasm and passion for good food, great wine and of course, exceptional levels of service. Both have university education in completely different areas of specialist study, but both have chosen to focus their interest and skills in forging ahead with the work they love most of all: top-quality restaurants.

Graeme has had a few more years of experience than Richard, working at a number of well-known establishments in the Dundee area of Scotland, including St Andrews’ Bay Hotel, Huntingtower Hotel and Taychreggan. Joining the team at The Three Chimneys & The House Over-By, created an opportunity for Graeme to specialise in fine dining. His wealth of skills and knowledge on the management side, are being put to excellent use in organising the Restaurant Team, whilst he develops his own food and wine knowledge, so important to The Three Chimneys customer experience.

Richard chose to make a complete change in his choice of career, having become enthused by his Bar and Barista experience whilst at university. He joined Marriott Hotels in Glasgow where his management potential, leadership and communication skills were soon spotted and his development encouraged within this organisation. However, his ambition to move to the Isle of Skye to join The Three Chimneys Team became a reality in 2010 when he joined the Restaurant brigade. His talents have been recognised here too, and he is rapidly building his knowledge base and management skills.

Both Richard and Graeme have shown outstanding commitment and professionalism in their work at The Three Chimneys to date. Between them, they deliver excellent team leadership assisting at all times to train and build the confidence of their Brigade. Richard and Graeme will continue to receive specialist training and development within the organisation here and experienced back-up from the Owners, Eddie and Shirley Spear, as well as General Manager, Angela Finlay.
