The Restaurant Team The Restaurant Team is led by Restaurant Manager, Jeanette Neil, and Wine and Beverage Manager, Daniel McDermott.
They are passionate about their professional role on the service side of Scotland’s vibrant hospitality industry, as is their enthusiastic front-of-house team. Jeanette is a local Skye girl whom owners Eddie and Shirley Spear have known for many years. Since her schooldays in Portree, she has devoted her career to developing excellent skills, knowledge and experience in the restaurant and hotel world. Every member of the waiting staff is frequently praised by guests for their attentive level of service; skilful and professional at all times, but also friendly, relaxed and welcoming. The team takes pride in being informed about the local food they serve on the weekly-changing menus.
Daniel McDermott also grew up on the Isle of Skye and later went to Napier University in Edinburgh to study Hospitality Management. He returned to The Three Chimneys over the summer of 2005 for his “official” work experience and following his graduation, worked for a year at Martin Wishart’s Michelin-star Restaurant in Leith. Daniel has developed a keen interest and knowledge of wine. More recently, Daniel has taken charge of the Wine List and Cellar.
Eddie Spear has been well-known, as the front-of-house face of The Three Chimneys since he and Shirley took ownership of the restaurant 25 years ago. Naturally, he still enjoys maintaining regular contact with his customers.
