The Restaurant Team is led by Jeanette Neil and Daniel McDermott. They are both passionate about their professional role on the service side of Scotland’s vibrant hospitality industry, as are their enthusiastic staff. Jeanette is a local Skye girl whom owners Eddie and Shirley Spear have known for many years. Since her schooldays in Portree, she has devoted her career to developing excellent skills, knowledge and experience in the restaurant and hotel world. All of the waiting staff are frequently praised by guests for their attentive level of service; skilful and professional at all times, but also friendly, relaxed and welcoming. The team take pride in being informed about the local food they serve on the daily-changing menus. Eddie Spear has been well-known, as the front-of-house face of The Three Chimneys since he and Shirley took ownership of the restaurant 24 years ago. Naturally, he still enjoys maintaining regular contact with his customers.
Daniel McDermott also grew up on the Isle of Skye and later went to Napier University in Edinburgh to study Hospitality Management. He returned to The Three Chimneys over the summer of 2005 for his “official” work experience and following his graduation, worked for a year at Martin Wishart’s Michelin-star Restaurant in Leith. Daniel has developed a keen interest and knowledge of wine and joined the team with a special remit to upgrade the Wine List and set-up the new Lounge Service provided in The House Over-By in the evenings. Cocktails are another of his passions.
The senior front-of-house team is completed by Sommelier, Luke Richardson.
