Head Chef at The Three Chimneys is Michael Smith. He and his Senior Sous Chef, Kevin MacLean, lead their skilful brigade of versatile young chefs. All of them enthuse over the quality of the wide variety of seasonal, fresh ingredients they have the fortune to be able to work with, cook and serve every day throughout the year. There is a close working relationship between the kitchen brigade and many local producers, growers and fishermen who deliver their supplies direct on a day-to-day basis.
Just as Shirley Spear was for 20 years before him, Michael Smith is passionate about Scottish food and restaurants. This was one of the most important factors why Shirley chose Michael as the right person to take over the reins at The Three Chimneys when she decided it was time to stop working at the stoves. Naturally, they maintain a close working relationship at all times and Shirley takes great pride in the new lease of life Michael and the new brigade have brought to the kitchen. The restaurant’s reputation continues to grow and grow and has achieved more awards and accolades since Michael took charge.
