The Three Chimneys needs a highly professional team to match the skills of the Kitchen Brigade. This is an excellent opportunity for those who are passionate about working at the forefront of the Scottish restaurant scene, to work with us here in Skye. We pride ourselves in giving top-flight service, with charm and friendliness at all times. We are small and intimate, with just 36 covers (extending to over 40 with turnovers, over most of the year) spread between 3 rooms on the ground floor of an original crofter's cottage, close by the sea. We serve lunch and dinner daily throughout the year, bar 3 weeks in January when we close for refurbishment. Dinner includes a Seven Course tasting menu, alongside a 3-Course a la carte. Enjoy taking pride in serving the very best, fresh Scottish ingredients. Your food knowledge will be important to us. Our Wine List is one of the best in Scotland and there will be an opportunity to use and improve your wine service skills too.
This is a fantastic opportunity for anyone who is looking seriously to build there work experience with a view to a managerial position in the longer term. We are looking for 2 Chefs. One will have relevant, proven experience working at 3 AA rosette level. We expect the successful candidate to bring good knowledge, skills and enthusiasm to The Three Chimneys, plus a passion for using the best, fresh ingredients available in Scotland. This is an exceptionally busy restaurant, operating 7 days per week. It takes a tight-knit crew to work at the pace required and the person who is selected to become one of the team will take-on a high level of responsibility and leadership within time. Starting salary will be in the region of £24,000 according to age and experience. Annual bonus. Staff accommodation if required, or assistance with finding property in this area. Driving licence and own transport essential.
The second position will go to a successful Chef de Partie looking to strengthen his knowledge and experience in all sections of a busy kitchen, handling extensive mise en place daily and contributing in a major way towards service. This is a fantastic opportunity to work as one of an experienced and talented team, using an amazing range of Scottish ingredients in a restaurant that carries an exceptionally high public profile. Minimum starting salary will be £16,000 plus annual bonus. Staff accommodation is available, if required. Driving licence and own transport essential.
